My Latin Cookbooks


I'm looking to fill out my Latin cookbook shelf. Anyone got recommendations for cookbooks on the cookery of Spain, Portugal and the Latin/South American countries? I'm more interested in cookbooks that detail the culinary history, culture and techniques than in massive recipe collections.

Another fine selection from the California Culinary Academy series and currently my favorite Mexican cookbook. Many techniques and a very wide array of recipes and styles.

HP Books publishes good, solid cookbooks. Between these two selections, I can brandish a mean Mexican dinner for 10, no problemo.
